Three-fourths of the protein, one-third of the energy, most of the calcium and phosphorus and substantial amounts of essential vitamins and other minerals in the American diet are from animal products. Recognizing that innovative research holds the key to meeting these challenges, 210 concerned individuals convened at Boyne Mountain, Michigan, May 4 to 9, 1980.
