Excerpt from Operating Expenses in the Wholesale Grocery Business in 1921 The reports on the cost of doing business in the wholesale grocery trade in 1921 are particularly significant in that they furnish a, picture of conditions in a year of generally severe business depression, during which problems Of readjustment had to be faced that had not arisen for at least fifteen years prior to this time. For two hundred twenty - nine firms that submitted fully comparable statements for both 1920 and 1921 the aggregate volume of sales Showed a decline of 30 - 4 from in 1920 to in 1921. Gross profit, in percentage of net sales, was greater in 1921 than in the preceding year; in 1920 the common figure for gross profit was lower than in any previous year for which records are available. This indicates that wholesale grocers generally took their inventory losses, occasioned by the heavy drop in prices, at the end of 1920. Despite the higher percentage of gross profit in 1921, the average net loss was greater in that year than in 1920. For all the firms reporting, the average net loss in 1921 was of net sales, as compared to a common figure of in 1920. This increase in net loss, even though gross profit was higher, resulted from the difficulties that were encountered in readjusting expenses to the falling-off in sales and the drop in prices. The common figure for total expense in 1921 was as compared with a common figure of 9% in 1920. Practically every firm showed a higher per centage of expense for 1921 than for the preceding year. Excerpt from Operating Expenses in Department Stores in 1921 The cost of doing business, according to the reports received by the Bureau, was higher in department stores in percentage of net sales in 1921 than in 1920. The chief items which were higher in ratio to sales in 1921 were salaries and wages, rentals, and advertising. Many of the smaller items were almost the same in percentage of sales in both years. The gross margin between the cost Of the merchandise and the sales was Slightly higher in 1921 than in the preceding year, but the difference was less than the increase in total expense consequently the average net profit was lower in 1921. It is to be noted, how ever, that the department stores Showed an average net profit for 1921 despite the depression, whereas the retail Shoe trade, the retail jewelry trade, and the wholesale grocery business, for which the Bureau also has collected figures, each Showed an average net loss for that year. The department stores from which reports were received for both 1920 and 1921 Showed an increase Of 4. 3 in net sales. This also was in contrast to the other three trades just referred to the retail Shoe trade having shown a decrease Of 9 in net sales In 1921, the retail jewelry trade a decrease Of 15 and the wholesale grocery business a decrease of 30 in net sales as compared with the preceding year. In businesses where the salesmen covered more than local terri tories, the common figure for salesforce expense was of net sales. This higher percentage of salesforce expense for businesses covering more than local territories was due, in part, to the heavier travelling expense incurred in selling in the wider territories. It was also probably due, in part, to the difficulty in securing as large an annual volume of sales per salesman in the more distant territories as in the local districts. In order to answer such questions as these and to learn the best practice in store management, the Bureau is collecting exact figures and other specific information from retail grocers. A preliminary summary of the figures which have been obtained up to the present time is presented in this bulletin. The Bureau of Business Research, it may be explained for the benefit of those who are not already familiar with its work, was established in 1911 hy'the Graduate School of Business Administration of Harvard University as an agency for the scientific study of business methods and problems. Because of the need for scientific research in marketing, the Bureau began with that subject. The retail shoe trade was first investi gated, and in June, 1914, a Similar study of the retail grocery trade was begun. The Shoe research is now being extended to the marketing of Shoes by wholesalers and manufacturers. Later other branches of whole sale and retail trade will be studied.
