Abstract: The critical relation of nutrition to the development of cardiovascular disease is examined in a collection of symposium papers which focus on the role of dietary fats in the etiology of arteriosclerosis. High serum cholesterol is associated with arteriosclerosis; hypertriglyceridemia, obesity, and abnormal carbohydrate or lipid metabolism may also be predisposing conditions. Other dietary factors, including a high degree of saturation in fats, may influence fatty acid transport, fatty acid composition of arterial vessel walls, blood coagulation, and the mechanism of thrombosis. Atherogenic effects of certain fatty acids have been demonstrated in experimental atherosclerosis produced in animal models. The epidemiology of coronary disease and dietary study methodology is reviewed.
