Excerpt from How to Choose a Good Cow To study the homely, commonplace cow is strictly in accordance with the spirit of the times. The growing tendency in education is to give a larger and larger proportion of time to the study of things that pertain to everyday life. Every man, woman and child uses in one or more forms the products of the dairy cow. In Western Wash ington many families and many communities depend upon dairying for their principal income, many others keep a family cow, and many depend upon buying all milk, butter, etc consumed. In any case, all are interested in the most economical production of high class dairy products. Dairy cows vary greatly in the amount of milk and butter fat they will produce and in the economy of production. Many will yield a large profit but many Will not pay for their feed with the best of care and are correctly termed star boarders. The majority of dairy herds contain some star boarders eating up the profits produced by better members of the herd. Many dairymen realize they are not clearing much money but are unable to detect the boarders. There is no more important thing to be taught in a region as de pendent upon dairying for its development and prosperity as Western Washington than the best method for selecting a good cow, and there is no better channel for the dissemination of this knowledge than through the public schools. There are two methods in use for the selection of a dairy cow 1. The use of the Babcock test and the milk scale. 2. Selection of a cow from physical makeup. Excerpt from Judging Dairy Cattle One of the chief factors influencing the cost of production in dairying is the yield obtained from each cow in the herd. Records kept on a large number of cows show in general that the highest average income over the cost of feed has been obtained from herds composed of the highest producing cows. Excerpt from Feeding Dairy Cattle That last statement is the fundamental: The productive ness of the earth must increase from generation to genera tion; this also is his obligation. This obligation works no hardship on the dairy farmer; on the contrary the more closely he carries it out, the more money he himself will make, and so much the better his farm will be when he leaves it than when he takes it in the beginning. All this is simply saying that every farmer must return to the soil each year, a little more fertility than he takes from it. In no other way is he truly farming; he is simply mining and on most of our farms too much mining has already been done. We must now begin to farm. Excerpt from The Cow This little book does not pretend to be a textbook nor a treatise on dairy husbandry, for there are plenty of such books already. It is simply an effort to set down the ideas of a dairyman concerning his own business and to view the cow as a very interesting animal who after all these thousands of years of close companionship with man still retains many primal instincts and many hereditary tendencies. So we may ask the meaning of old winding cow-paths and little calves hidden in the bushes and the tragedy of the herd bull condemned to spend his days tied to a post by a ring in his nose (like Sampson, old and blind, grinding meal for his conquerers) when his place is to march proudly at the head of his obedient herd. Dairying has grown into a vast and complex and exceedingly modern business, conducted in great manufacturing establishments with white tile and steam sterilizers and pure cultures and bacterial counts; yet there ought to be a place to revive at least the memory of old farm houses under great trees and herds winding down the road at milking time, and farm women making butter in cool spring-houses or shadowy white-washed cellars.
