DOWNLOAD EBOOKExcerpt from The Eclectic Magazine of Foreign Literature, Science, and Art, Vol. 63: January to June, 1896 It has been given to few to make so many discoveries of practical impor tance, after any one of which it might have been said he has deserved well of his country and paid his debt to man kind. He reformed the practice of vinegar-making and brewing, cured wine of its disorders, saved the silk industry not of France alone but of Europe, and showed how to drive out or to tame the germs of some of the most formidable diseases. But from the first, when he studied tartrates, to the last, when he wrestled with hydro phobia, his labors had two aspects practical importance and speculative interest; and while we recognize that no man of science has been of greater economic service to his country, we must not forget how he changed the whole theory of fermentation, and played at least an important part in establishing the germ theory of disease.
