Excerpt from Investigations of "Milk Tests" The cost of keeping a cow is an item not at all considered here, as each individual owner is the one best supplied with facts and figures from which to make that calculation for his own locality. The following table gives a record of the cows tested. It shows a striking variation, and how owners of cows could calculate the profit and loss per cow, if, in addition to the per cent. Of fat, they knew the pounds of milk produced by each cow during the year. Although somewhat limited, this is given as a beginning of work to be more extensively followed up, in the hope that such an illustration may suggest to those interested a way of becoming so acquainted with their cows and business that the cause of success or failure can be better understood each year. Excerpt from Market Milk Investigations The present bulletin treats of an experiment in scoring or judging the value of market milk and cream as conducted by Mr. C. B. Lane, Assistant Chief of the Dairy Division, at the National Dairy Show, Chicago, in February, 1906. An attempt was made to determine ways and means of giving a fair and accurate score in this class of dairy products. Butter, cheese, and other products have been for years judged as to their quality in contests and on the market, a numerical score bemg given to indicate their value. This bulletin treats of the methods used in the Chicago test, with lessons learned from the course of the work. Much credit should be given to the officers of the National Dairy Show Association and to the Chicago Board of Health for the interest shown and the assistance rendered in making the test a success. Excerpt from The Alcohol Test in Relation to Milk In Table 1 are shown the results Of the alcohol tests which we. Have made on colostrum milk from two cows. Three tests were made, using 75, 68, and 44 per cent alcohol. The results Show clearly that colostrum milk gives a positive alcohol test and that the stronger the alcohol the longer the test will be positive. It will be noticed that the milk from cow 16 gave a positive test with 68 per cent alcohol for 24 days, although the acidity was low after the fourth day. It is evi dent from these results and from those Obtained by other investi gators that the coagulation Of milk in the first Of the lactation period by alcohol is largely independent Of acidity. Excerpt from Testing Milk and Cream Sampling is the first important step in any test: an inaccurate sample Will of course give incorrect results regardless of the accuracy of the test ing. The experience and skill of the operator cannot offset inaccurate sampling. The most satisfactory method of mixing milk for sampling is to pour it from one container to another. If the cream has risen one must repeat the pouring three or four times and perhaps warm the milk slightly in order to soften the lumps of cream and to distribute the fat uniformly throughout the milk. In cow-testing work the complete milk; ing is poured from one pail to another as soon as it is drawn, and the sample taken at once. The sample must be taken Immediately after mix ing, because the fat soon begins to rise. Milk stirrers or mechanical agitators should be used if the milk cannot be poured from one container to another. Great care is needed to insure thorough mixing immediately before the sample is taken.
