Excerpt from Second Year In French The end aimed at by every student of a modern language should be not only to read it, but also to speak and write it correctly. As the knowledge of a language evidently consists of these three essential acquirements, to neglect one of them is a mistake that no serious argument can justify. Excerpt from A Textbook on French There are many ways in which man may make his thoughts known to others; as, for example, by grimace, gesture, the signs Of the deaf and dumb, symbols, pictorial writing, and pictures. But better than any or all Of these, are oral speech and written language. It is chiefly by this faculty Of speech that man is distinguished from the lower animals, and this faculty is so far above the power of expression possessed by brutes that many people believe human language to have been a gift of divine origin. Excerpt from Second French Book The first french book was drawn up according to the best continental methods, of which the above quotation admirably expresses the aim. An eminent critic said of my first french book that it is arranged so that the Old-fashioned teacher can use it, and so that he will not be old-fashioned any longer when he has used it. The second french book is intended to follow on the same lines. Upon the practical suggestion of a colleague, I have fused the second and third french books into one: the first french book with its 30 'lessons' takes an average School one year and a half to get through; the second french book with its 40 'lessons' will pro bably occupy two years and a half if not three, especially as the Lessons are more condensed. It was thought preferable to have only two French Books 'for Preparatory Schools or the Junior forms of any schools. I have endeavoured to make this second french book as self-contained and independent of the first as possible. I have given a little less guidance to the teacher. Excerpt from An Introduction to Old French This book contains no independent research and little scientific method. Suggested by some acquaintance with the difficulties of students who begin to read Old French, it has been written for the convenience of candidates for the l.l.a. Title of St. Andrews University, and perchance may be found useful by students working under the Cam bridge University scheme for a tripos in Mediaeval and Modern Languages. Professor Crombie, of St. Andrews, for his kind encouragement, and Mr. G. Saintsbury, for a timely hint regarding the scope of this work, have my thanks. Classic French food is hotter than ever. But one thing hasn’t changed—few of us have the time, the patience, the technique, or the cream and butter allowance to tackle the classics as presented by Julia Child’s Mastering the Art of French Cooking. The good news is—we don’t need to. For the past 40 years Richard Grausman, America’s premier culinary teacher, has been training American chefs in a simpler, better way of French cooking, and in French Classics Made Easy—a refreshed and updated edition of his original collection, At Home with the French Classics—he shares all of his extraordinary innovations and techniques. Golden soufflés in ten minutes. A light and luscious chocolate mousse that can be made as a cake, a chocolate roll, soufflé, or pudding. Plus Cassoulet, Boeuf Bourguignon, Coq au Vin, Bouillabaisse, Poached Salmon with Beurre Blanc—in all, 250 impeccably clear, step-by-step recipes in range of anyone who knows how to boil water or dice an onion. When a step isn’t critical, Grausman eliminates it. If something can be done in advance, he does it. Plus he’s cut the amount of butter, cream, egg yolks, salt, and sugar; the result is health-conscious recipes that don’t compromise the essential nature of the dish. Techniques are illustrated throughout in line drawings. It’s the grandness of French cuisine, made accessible for both entertaining and everyday meals.

Excerpt from First Book in French IN preparing this book, particular attention has been paid to the needs of those beginning the study of a foreign language. The arrangement of the book is designed to combine the inductive and deductive methods of teaching French, and, as far as possible, to eliminate the disadvantages of each. The French vocabulary is based on the reading selection and is presented, not by artificial lists, but according to the natural principle of association of ideas. From the outset, connected passage: for reading are given; they include a broad range of everyday, conversational topics, and many incidental allusions to historical and literary subjects that allow fur ther expansion in the oral work of the classroom. The book readily lends itself to the needs of classes in which the advantages of the direct method are combined with those of the grammatical method.
