Excerpt from Mineral and Aerated Waters In this book I have endeavoured to give an outline of the early methods of making artificial mineral waters, and to trace the gradual evolution of the primitive forms of apparatus first invented into the carbonating plant of the present day. During the eighteenth century so much attention was given to the subject in the scientific journals of that time that it is possible to trace the beginnings of the mineral-water industry with much more detail than can be done in the case of many other industries. Descriptions of aerating processes and diagrams of apparatus are to be found in many unexpected places, and I wish to acknowledge my indebtedness to Mr. William Kirkby's "Evolution of Artificial Mineral Waters" for several sources of information that would otherwise have escaped my notice. My best thanks are also due to Mr. Kirkby for his permission to make use of the description and diagram of Withering's apparatus, and to Mr. A. Chaston Chapman, who has kindly supplied me with photographs of the wild yeasts illustrated in Chapter X. I would also thank the different manufacturers of modern plant who have placed photographs and descriptions of their machines at my disposal and have given me every assistance in their power.
